Cookies & Cream Protein Cheesecake

INGREDIENTS:
- 200g reduced fat digestive biscuits
- 50g melted coconut oil
- 500g quark
- 500g extra light cream cheese
- 2 servings of Promax cookies & cream
- 5 cookies
METHOD:
- Blend the biscuits in an electric blender and pour the crushed biscuits into a large bowl
- Mix in the cocoa powder and the coconut oil to the biscuit mixture
- In a separate bowl, add the quark, cream cheese and Promax powder and mix together, then add the cookies broken in to pieces and mix
- Pour the biscuit mix into the base of a lined cake tin and press down and to the edges
- Add the creamy mix on top of this and spread evenly
- Bake for 20 minutes at 160 ℃ / 320 ℃ / gas mark 3
- Leave to cool before refrigerating for 4 hours
- Enjoy!
