Mini Protein Christmas Puds

  • INGREDIENTS:

  • 50g self-raising flour
  • 2 scoops Maximuscle Chocolate WPC
  • ½ tsp baking powder
  • ½ tsp ground mixed spice
  • 10g stevia
  • 1 egg
  • 20g unsalted butter
  • 25g black treacle
  • 1 jar mincemeat
  • 100g raisins
  • 100g sultanas
  • 1 peeled & grated carrot
  • Zest of ½ orange
  • 1 tbsp icing sugar (optional)
  • METHOD:

    1. Preheat the oven to 170°C (150°C fan/gas mark 3) and grease 4 individual pudding basins.
    2. Sift the flour, baking powder, WPC and mixed spice into a large mixing bowl. Add the egg, stevia, butter and treacle, and mix together using an electric whisk.
    3. Add the mince eat, currants, carrot and grated orange, and mix thoroughly before dividing between the pudding basins.
    4. Stand the puds in a roasting tin and add boiling water to the roasting tin until it covers half way up the pudding basins.
    5. Cook for 50-60 minutes, or until a skewer comes out clean.
    6. Leave to cool and then turn out the puds onto a plate before dusting with a little icing sugar before serving.
