Sweet Potato Brownies

INGREDIENTS:
- 2 medium-large sweet potatoes
- 14 Medjool dates, pitted
- ⅔ mug ground almonds
- 50g Plain flour
- 1 scoop Maximuscle Promax Chocolate
- 60g cocao powder
- 3 Tbsp maple syrup
- 3 eggs
METHOD:
- Preheat oven 180°C/Gas Mark 4
- Peel & boil potatoes for 20 mins
- Mash the potatoes, and transfer to a mixing bowl. Add maple syrup and dates to the potatoes and mix
- Add the almonds, protein powder and cocao powder to the mixture and stir until blended
- Add the eggs to the mixture and stir
- Transfer the mixture to a well-greased baking tin
