Cinnamon and Apple Crumble

There are very few people who don’t love a good crumble. Thankfully, we’ve transformed this traditional pudding into a healthy apple crumble by ditching the flour in favour of nutrient-rich ground almonds. We also lose a lot of the refined sugars you’ll normally find in this classic dish by using local honey.

Ingredient List

    For the crumble:

  • ½ cup butter, at room temperature and cut into cubes
  • 1 ½ cups ground almonds
  • ¼ cup rolled oats or dessicated coconut
  • 2 tbsp local honey
  • 1 tbsp stevia
  • 1 tsp cinnamon

    For the apple mixture:

  • 1 kg cored, peeled and chopped apples
  • 1 tbsp water
  • 2 tbsp local honey
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Method:

  1. Start by making your crumble filling. Tip the chopped apples into a large saucepan with the water, honey and cinnamon. Give it a good stir, then cover and cook on a gentle heat until softened. Stir in the vanilla extract.
  2. Grease an ovenproof dish with butter or coconut oil, then spread the apples onto the bottom.
  3. Next, mix together all the crumble topping ingredients with your fingers until it starts to come together into a “crumble” texture. Chill the mixture in the fridge for 20 minutes, then tip it over your apples..
  4. Bake the crumble in the oven for around 20 minutes, or until golden, then serve with scoops of protein ice cream, cream or greek yoghurt.
